Paella 4 portions one hour from start to finish …. BonAppetite!
Stage1 ingredient quantity method
olive oil 50ml Cut the beef salami in 1 cm cubes. Heat the oil in a Paellera'
beef salami 100gr if available or a heavy wide shallow pan and fry the beef salami until brown remove from the pan
chicken thighs 4 pieces Season the chicken and fry in the same fat until browned on all sides
remove and place on one side with the salami
stage 2 - ingredient quantity method
red capsicum 1 large Add to the remaining fat and cook for a few minute until soft
cut in 8 strips
garlic, finely 1 clove chopped
stage 3 - ingredient quantity method
rice, Valencia 250gr Add to the pan and stir in for a few minutes to coat with fat
or Piedmont and become transparent
stage 4 - ingredient quantity method
chicken stock 750ml Have the saffron previously soaked in a little
Italian dice tomato 1 can 150gr of the hot chicken stock then add together with the remaining stock
Saffron 1 good pinch and other ingredients. Season with salt and pepper and bring to the boil
Bay leaf 3 leafs allow to simmer for approx 10minutes
stage 5 Ingredient quantity method
Whole raw prawns 400gr Add to the pan together with the reserved salami and chicken
Mussels fresh 400gr and cook for another 10 to 15minutes, or so until all is cooked and most of the
Squid cut in rings 200gr moisture has been absorbed on slow to medium heat
Green beans 200gr Serve immediately in the cooking pan
Cut and trimmed
Lemon 2 whole serve on side with Paella
Cut in halves Seeded
Special Points
A Palella is a shallow heavy pan made of wrought or enameled iron or stainless steel, with handles on each side.
There are many regional variations of Paella which include the use of slices of Chirizo Sausage, Lobster, Rabbit, Fish Peas, Artichokes and so on.
