So let’s put together this simple and quick recipe of Portuguese Sautee Chicken in my home I like to serve it with homemade potato gnocchi but that’s another story, any plain starch will accompany this dish well, and the simplicity of it allows you, to be a little adventurous on the final stage of the cooking, all types of vegetables can be added, but for me Oven dried kalamata and fresh chili does it justice

Portuguese sauté chicken serves 4. You can if you like substitute the chicken with any tender quick cooking protein; it’s great with fish, Beef, or lamb.
However remember they must be tender cuts because of the cooking time.
Stage Ingredients quantity Method
1 Olive oil 50 ml Heat the oil in a saucepan
Boneless dice season the chicken with salt and Chicken approx 3 cm
800 gr Pepper and when the oil is very hot
Add the chicken and color quickly on
both sides.
Cover with lid and cook slowly till tender
2 Dress the cooked chicken in oven
Proof dish, cover and set aside
3 onion 150 gr Add the onions to the pan with a little
Finely chopped olive oil and fry quickly to little color
Button mushroom 150 gr then add the mushroom and cook
Finely sliced together until also lightly colored.
Drain off any surplus oil
Tomato 350 gr then add the wine bring to the boil
